Sunday updates with recipe
Good Morning and I suppose Happy Sunday. I have never really been able to figure out if Sunday's are the end of the week, or the beginning. Either way, I love a nice slow Sunday, especially if it's been a crazy week.
I enjoy doing this Sunday blog update post, because it lets me share a bit about what's going on here, and I can spend the rest of the week concentrating on picking my weekly shared recipe, and of course designing the crochet patterns that I share with you all.
This week hasn't been horrible, not great, but not horrible. Poor Mishka had to go to the vet on Tuesday for a wicked eye infection. The same eye that she had to have a biopsy on about a month ago now. However with all of the meds they put her on, it's clearing up beautifully.
We lost a good portion of the garden. We had a heavy freezing frost , and even though I covered my tomatoes and jalapeno plants, I lost all of the tomatoes and all but 5 of the 12 jalapeno plants. My zucchini hadn't sprouted yet, so that was safe. My zucchini though has finally started to sprout, but I have to keep an eye on it to see if I need to re seed any of it as only 3 out of the 8 have come up so far. When I go to get my replacement plants, I'll decide if I want to reseed if they haven't come up, or if I want to just buy plants.
I've been working on a fun new pattern that I was hoping to post for my Monday crochet pattern. However I think I overestimated myself with this one, and it's taking a little bit longer. However I do have some other patterns written that I can share with you all. I just have to decide which one. I'll likely make that decision today.
Yesterday I was working on my Christmas gift sewing. I've been making patchwork potholders to give as gifts. I have to make 25 of them, so I'm making 26 because one just never knows. I almost have the front parts mostly finished. I need to work on spending at least an hour a day in front of the sewing machine until I'm caught up on all of my multiple sewing projects.
So as promised, I have a tasty recipe to share with you all. It's one of Frank's favorite recipes that I make. I don't make it overly often so that it stays his favorite. Of course it's low carb because he's diabetic, and being able to eat something without his blood sugar sky rocketing is always nice. This is a Sauerkraut soup with kielbasa. What I love about this soup is how simple the ingredients are, how surprising they are together, and how easy it all comes together!!!! So without further delay I present to you, the recipe!!!
2 tbsp olive oil
16 oz kielbasa sliced 1/4 inch thick
1 cup celery chopped
1 cup onion chopped
2 cloves garlic minced
2 cups chicken broth
16 oz sauerkraut with brine
1 cup heavy cream
1/2 tsp dried dill
1/2 tsp ground black pepper
Add olive oil to heavy stock pot over med/high heat, once heated, add in kielbasa and brown for about 5 minutes.
Once browned, add celery, onion, and garlic. Stir to coat all the veggies. Saute for about 5-8 minutes until onion is translucent.
With heat still med/high pour broth and scrape the bottom of pot to pull all flavors together.
Next add Sauerkraut, heavy cream, dill, and ground pepper to pot and stir to fully combine. Bring to a boil and reduce temp to low and simmer for 10 minutes.
This makes 6 servings at 370 cal per serving, 7 carbs, and 14 grams of protein.
