Sunday updates and quick recipe

Hello and Happy Sunday!!! It was a really great weekend here. We got quite a bit done this weekend, went to Costco, Tractor supply, had lunch, and of course the hubby worked on his new to him tractor, and I worked in the garden.

Frank got a new to him Kubota L185. I'm not exactly sure when it was made but sometime in the late 70s or early 80s. He got it as a project tractor. It came with a finish mower, and I think he's planning on seeing how much quicker he can get the mowing done using this little speed demon of a tractor.

I was able to harvest the first of the lettuce from the garden. For dinner last night I made BLT chaffles (recipe for the chaffles will be below) That lettuce was some of the best I've had in a while. I think there must just be something better about harvesting your own anything out of the garden. Tonight and tomorrow night though I have to go out and cover everything with some old bed sheets as it's calling for a freeze warning tonight and tomorrow night. Nothing more fun than spring in Virginia!!!

I have a new pattern that I'll be publishing on Monday. It's just a cute little thing that I had been working on. I'm not sure if it's more of a summer, or more of a fall thing, but I'll let you all be the judge of that.

Speaking of patterns and publishing, for the last few months, I've been working on a book. It's nothing big or fancy as it's my first book, but it's a book of dishcloths for beginners. I'm publishing on Amazon. I don't have a publish date as of yet, but it should be here in the next month if all goes well. I've always wanted to publish a book, so I'm a bit on the excited part for this.

So onto my quick and easy chaffle recipe, that's not my recipe per say, but it was so easy that I memorized it, and Frank says it has the closest taste and texture to bread he's encountered since we've given up bread, rice, pasta, and all the things made with any type of flour that's not almond or coconut.  This makes 2 chaffles which is one serving.

1 and 1/2 tbsp almond flour

1 tbsp sour cream

1 egg

1 pinch of baking powder

mix well and divide between 2 mini waffle makers. Cook until golden

That's it...I actually will make multiple batches at once and they keep well in the fridge. Plus you can put them in the toaster, you just have to kind of watch to make sure you don't burn them.

Well that's it for this little post update. I plan to stay pretty active with this blog between garden updates, some recipes and of course all the free patterns that I'm planning on writing and sharing with you all!!!!
